Identifying Student Knowledge
I teach a couple different classes the first course I am in is an interductery course. Using real life exaples keep the student interested on how this is relevent to his future in the field.
The other course is at the end of the program, using a pre test lets me know how much they have retained

My subject matter is also laid out for me but I do have them to fill out a simple form asking them to write out why they are taking the course, what interests them regarding the course, what are their expectations and prior knowledge of the subjet matter.
I have yet to have to come up with my own subject matter, since I sub most of the time. When I come into a class though I like to find out who is there and what their level of interest is in the subject. Verbally asking is the best for me.
I also like to use a pre-test. It helps me gauge where the students stand with the subject they are going to learn. It also helps me feel them out so I know if I may need to spend extra time on certain subject matter.
