I find that once you have empowered your students to take control of the subject manner once they have fully understood the theory and methodology, they are less afraid of applying these same techniques to other cooking applications.

Empowering students is very difficult to embrace; yet, it is the characteristic that defines good instructors from great instructors.
I have found that the empowering element of engagement to be particularly helpful for many students. Trying new things, asking higher level questions bringing in outside research or experience are great indications that the students are taking charge of their own learning and seeking out these connections.

You are talking about two key words to help students stay motivated. These are relevancy and application. If they understand these two work then your are right they will feel more comfortable in transferring those skills to other cooking applications.
