Assessments
As a new instructor and watching some of the other instructors and their test choices, it appears most do a variety from all of these topics discussed. T/F, multiple choice, short answer, and essay. Much does need to assess the critical thinking skills of the students.
I think you can have a good mix of all the types of testing to asses the students knowledge. Some content would be better as an essay to see what they have learned and some just a simpe T/F. I think it depends on what the subject matter is and what they were to extract from it.
