Simulations
To prepare students for the experiences of restaurant work, we set up an activity we call speed drills. In this drill, a mock restaurant line is created and the students rotate thru the different stations(pantry, grill etc). They need to understand what products will be produced in each stations and therefore what items need to be prepped-not only the food but also smallwares and platewares. Timing is a critical component in these drills because food from all stations need to be ready at the same time. With these drills, the students get to experience the pace and demands they will face with in the food service industry.

Simulations area great way to learn and practice. Drills and mock interviewing is what I encourage students to do!
I agree with John, in a profession such as he is training his students for, any real world simulations will be vital to the learners development. Kudos John.
In my profession of medical coder, students are typically learning bit by bit, but I find that this is not aligned to real life expectations.
Therefore, I have copies of real doctors reports that I can present to them to code. We go over them together so that it is not so stressful, but it is good for them to get a taste of what it will be like in the field.
Simulations play a large part in our student development. We create problems for the learners to troubleshoot that are what they will face on the job. This gives a very "real world" feel to the project and keeps the students engaged. Also helps to build confidence when the problem is solved.

But - John - don't you think that there are ways to provide simulated learning without having a lot of expense? I would challenge you to look around home and school and I bet you are able to identiy tools that you can use. Please let me know if you have any success.

This sounds like a great learning activity .I would like to adapt it for my field but it might be expensive
