I always conduct a review at the beginning of class from the last class session to help students focus on the subject.
My organization uses Turning Point...I give a review quiz from material covered during the last session to see how much the learners retained, and also to go over particular sections in the event too many people missed the question, as Turning Point provides instant feedback on the correct answer and a bar graph of the selection percentages. It's also an opportunity for the learners to ask questions or get clarification before going on to the next lesson/presentation, etc. Lastly, while the quiz is anonymous to the learners, I can see how any particular individual learner did, and using that throughout the course I can see who is having trouble, and then offer additional training or material to read up on.
I have students share Ah ha moments and share a new concept that was learned int he class for the day. In addition, students have to share how the newly acquired skill or concept can be applied in real life situations.

I do to. I like to get a feel for my students and the knowledge and experience they are bringing to the class. Pretesting gives the baseline I need to customize my instruction to and for that specific group of students.
