Creating study guides for extra credit
I like to offer my students extra credit points by aloowing them to create study guides on a chapter or topic. This way, they are reviewing the information they learned and I can use the study guide for future students

One thing to keep in mind when offering extra credit is that it might allow a student to pass the course when they don't really deserve to.
However, if you do offer it, it's important to offer to everyone, and describe the expectations for grading as soon as possible.
