Absolutely! It's not uncommon to have a daily quiz to evaluate how well the students are retaining the information.

Everyone evaluates someone or something everyday, but as far as a evaluation toward an instructor (or student for that matter) should be be durning the middle and end of a longer period of class phase or at the end of a shorter one. Also bear in mind that some student will use the evaluation to simply get back at an instructor whom they may not got along as well with.
