Great. This sounds like you keep your students thinking, and when critical thinking is involved, it usually helps students perform better and keeps their interest as well.

In post-conference, which is usually in the middle of the afternoon, 2:00 pm, (12 hour shift), I usually start with a short math, diagnosis or drug card quiz to have my students focus on specific ideas/drugs, etc. and think about what they know. They have been with patients all morning and now they have an opportunity to learn something new academically. We review the quiz and I find out if any of the students are having problems with medications, or signs & symptoms of the diagnosis we are studying. I can then go into more depth and provide a handout, or game to reinforce learning. It also helps them prepare for their theory test each week.

Alos, sometimes asking a question to the whole group, then ask a random student to give their opinion works well.

Switch up what is going on in the classroom if they seem to wander off task... go to a discussion, or lecture, or hands-on... anything that will be different than what we had been doing so that their minds will refocus on the coursework.
I tell my students that they are limited only by there imaginations.Pick a project you really want to do,then draw up the prints,and change it for the better as you go.
Give the right expectations and motivate the students with project and guess speakers.
