make up tests
I always create a new test for students who miss and it must be taken in the next class they attend. Its imperitive to give a new test as students are creative in copying and providing their friends with the test.
James,
I think a lot of instructors use the "drop the lowest grade" technique as a means to add a degree of overly fair while recognizing life events happen and a small adjustment doesn't really alter grades tremendously.

I started allowing students to drop their lowest test grade, which means they can miss one test anyway. That way I don't have to dock scores or hold other tests back - also I can determine the curve right away. I feel like my students had attendance problem when I allowed them to make up work late.
Ticha,
Although it's fairly easy to get a doctors note, if it seems legitimate and the students appears ill (or has been), accepting late assignments (with downgrade) seems reasonable and fair.

What I think would work is definitely downgrading unless they have a doctor's excuse or a family or serious tranortation issue. I have not done essays, but I will consider that as well.
Jack,
Many instructors will also downgrade for late-taken exams. I like to always include essay, fill-in type questions so that my make up test can be easily substituted with similar questions of like difficulty.
