Is it appropriate to include the students in the lesson plan? (as far as types of activities)

Yes, maybe get feedback of the lesson plan's from the students after you have preformed them to see where they think you could improved,using that information to improve future classes.

In some instances, I feel that it is a good idea to include student feedback within the lesson plan, especially if it is in response to a particular type of activity. However, this practice should be limited, to ensure that the students do not perceive that they are "in charge" of the direction of the course.

I guess you would have to base that off of your policy/protocols of your facility. I know that we aren't allowed to include our students in the lesson plans. I have asked the students inprior classes, what types of activities they like and can learn easily from. I can then take that and help to base my lessons on their type of learning.
