I also teach teach food safety. Much of it is lecture. When it comes to the facilities portion of the class, after we have watched the DVD and discussed the chapter, we break into teams and go into a lab to find & identify examples of good facilities management, and sanitatin practises.

I definitely agree with you that having a question/answer game is a good way to get students to remember the material. In sanitation class, I used to split the class into teams and we would play "sanitation feud." It's like family feud and it fires up the students as they are trying to compete each other to get the correct answers. It's a fun way to have the students get involve with their learning.
