Depending the course, debates can be a good way of getting the students engaged in the conversation.
I have been using a mixed strategy for about 4 years now. Even during "Lecture " time , I will present a general question to the class about ant given topic. First I ask for the most correct answer, the ask another student why the answer is correct. Then I will move on to another studened how they came to that conclusion. Works very well and I have been commended by several students who state that it kept them engaged. The other part of that strategy is to implement the lesson or lessons learned while we are in the workshop.

In my Introduction to Computers class at the end of a given chapter I present them with questions based on a hypothetical scenario. They are required express their opinions based on personal experiences or beliefs regarding the individual topics.

Teaching culinary just about everything we do involves critical thinking and high risk. the instructor has to be involved all the time.we demo one day and the students produce that item the next day while in lab, so remembering from day to day what tasks they need to complete is sometimes diffacult we do a quck review before they start there lab work

I teach a course called The Business of Marketing and Design. As a project, I give the class a RFP (Request for Proposal) that has a client requesting a comprehensive marketing plan that includes preparing examples of the Brand Image they create for the client.
The class works as a collaborative agency and must do demographic research, competitive analysis, target market research and also find a location for the fictitious business.
The class must use the various areas of research they do to create a market profile, the best choice of media to use for the client's business, and also to develop partnering relationships with third party businesses that will benefit both businesses involved.
The final exercise for this project is to make a formal presentation (as a group and also a written proposal) to the client outlining the results of their research, the reasons they chose the media they propose, and costs for the entire proposal.
This entire project requires critical thinking to determine what their research actually shows regarding their client's request; collaborative thinking in group meetings to define and agree on a Brand Image and approach to media usage, and also the method they will use to present these findings.

I teach a culinary class.In regard to motivating restaurant employees I ask them what would you do if you were a chef. The answers they give are then dicussed with everyone participating in the implications and ramifications of cause and effect with the bottom line.We all share personal experiences which relate to that method on both sides of the table and how we felt and responded.
I teach esthetics so I often come up with scenerios in which the students must utilize critical thinking in past lectures and discussions to facilitate the given situation.
I teach at a technical trade school. I like to fit the subject I am teaching to things the students can relate to, whether it's video games or life experiences, ect. Something they can say to themselves "Hey that happened to me" or "I can see that". Then ask questions based on that so they have the opportunity to give some of their own life experiences to contribute to the lecture.

It is the instructors responsibility to ensure all students are working/learing in the lab setting.

One needs to watch the lab groups and make sure all are gaining the expierence. Often people let the others do the work for them. Then come test time they cannot understand the material.
