I like to do both. With the material you can share content and then show application. This combination helps the students to see relevancy. This gives a much higher rate of cognitive retention.

Is it better to tell them what to really expect when they get into the field. Or is it better to stick to teaching them the basics and let them find out the rest on thier own

It can. It all depends on the ability of the new instructor to "translate" his/her previous management experience into the human factor as an educator. Good people skills are highly transferable to other settings.
