Great question that many of us raise in our own minds. The key is to break the content down into small units of information. Also, look at the materials and decide how much is "nice to know" information and how much is "essential" information. Concentrate on the essential and assign the other material as outside reading or report writing.

I agree and there are many ways of doing it. From hands on activities to guest lecturers or shared experiences getting students to engage in the material really makes the learning more concrete.
