How to motivate students who think they know everything?

Some students come into our courses with a good amount of real world experience. At times, I find these particular students hard to motivate because they feel that they know the subject already and only in class to get credit. Any suggestions?

Glenn,
For students like this I have developed a series of case studies. I have them work through the cases and then share the results they come up with. Two things happen with this, one they and you see they know what they are talking about and two they see where they need additional content and knowledge. Either way they become more engaged in the learning process.
