My classes are almost all demonstration. It is much easier to show someone how to make Hollandaise than tell them how to make hollandaise!
I am trying to enphasize to my students the importance of not missing class and always paying attention to everything that happens around. Due to the technical level of a culinary degree practice is of upmost importance.

What a great example of "immediate use of newly acquired knowledge". They are informed of the expectations (objectives) are taught the content and then apply it. This should greatly enhance the retention of the content and improve the skill development.

I start my class everyday with the learning objectives of the day and then I go into a demo and lecture. I have found this helps the students to learn and take notes. Whatever they don't understand they can ask more questions. It works well due to the fact my students then cook what I just demoed.

Can you create teams where students that are "up to speed" on the content and skills could do the demos for the other students? A two person team would have one student that could share with the other student in the demos. So that it doesn't appear to be just a remedial session each team would have an assignment to complete that would include learning the components of the demo by each team. I have used this method before with good success.
