Good point about making instruction real. The students need to see how what they are being taught is relevant to their career path. Real world career examples will do much to help them in this area.

Breaks and moving around are important strategies. Giving real vocational-life examples of a subject matter are always good attention-keepers that spark interest and questions

Students need that break so they can let their brains rest a bit not to mention their bodies. Learning is hard work and so planned breaks will help them to refresh and refocus their minds to learning.

I try to watch body language and either change topics, format or give a break when the fidgeting begins.
i try to give a quick break every hour . lets the student clear there minds and get them back on the subjects in the classroom

Class management is critical for student success. By making the entire classroom/lab yours by moving around it is a good strategy.
