Applying class demostrations allows the student to obtain vivid detail on how the method/procedure should be done.

It allows the student to become more motivated and confident when they actually see the instructor's performance.

Another great example of how instructors can use students as resources. This gives the students confidence as they share their knowledge plus helps to reinforce the skills of those that are explaining the procedure.

Demos are an incredibly important aspect of the learning environment. Every once in a while though, a demo can be boring to the students if it's one they've seen a few times already. In these situations, I try to keep them motivated and focused by asking a volunteer to discuss the process and theory in detail as I work through the demo. What's really great is that if the volunteer slips up in the explanation, one of the other students will chime in. It encourages mutual knowledge sharing, and all I have to do is make pastry cream :)

Right you are. Demonstrations get the students into the learning process by them being able to see how they are going to use the course content. Also, it motivates them because shortly they are going to have the skills it takes to do what is being demonstrated to them.
