Stick to what is in the syllabus. By doing so, you will keep the students in the same areana. If you're all over the map, then your students will be all over the map.

I think you could build a very good case for such an approach. The key is to remain consistent in terms of course requirements so the students will know from day one what the expectations are. Other adjustments can be made as needed.

Could a case be made for a more organic approach to the syllabus? I find that as a class progresses and the strengths and weaknesses of the students become clear, I sometimes adapt to them by altering the nature of the course to some degree.

The syllabus needs to be clear and concise. If it is not followed then there is no value associated with the syllabus by the students. With this loss of creditability comes loss of creditability for you as well and then it becomes difficult to maintain class control. Good point, thank you for making it.
