Constant evaluation of students

I have found that constantly evaluating students during a practical exercise gets them ready for testing. As I go through the prelude to the exercise I ask questions as if I am a new student and unaware of what I should do next. If they are performing and get a result different than what is expected, it is a time for leading questions as to either why this result was achieved and what does it indicate. I have found that questions as an opportunity presents itself helps with the test scores by helping me evaluate my teaching skills and adjusting accordingly.

I always do a thorough quiz review. I also do printed reviews too. I never just keep it the test though! They cant beleive sometimes how much they studied compared to what was on the test. But i feel it helps retain the info not on the test just that much longer. i also add questions from previous modules. Cooking is a series of building blocks and alot of the information must be retained to go forward, so anythinh i can do to help with the retention of as much info as possible i feel like i'm doing my job.

I like to perform rigorous testing but will many different styles. Every day my students are "assessed " on the work(dishes) that day. This illustrates the students learning ablity on many levels. To produce quality work a student must not only have the skills nesssesary to replicate a dish "demo'd" but be able to take legible notes, have active listeing skills amongst other skills.

kind of like review with questions... ask the questions that the students need to answer as the question for the test... making them understand the complexity of the question... thus making the answer easier to come up with.
