Some students do better with written exams and others do better with practial exams.
As an instructor in a vocational school I like and use skill application tests for the most part. Even then, there is a place for the multiple choice test and completion test for the areas that need to be remembered.

Currently,
I am the externship coordinator. We assess the student's experience on externship with short answer responses. I notice that some students do very well in expressing themselves through the written word. Others need time to talk it out. I wish we had the ability to draw them in using other methods of questioning. If given the opportunity, I would have them answer some of the questions based on multiple choice options. I would then have them expound on their responses based on their experiences.
I will submit a request to our director of compliance to modify our externship notebook.

I am an instructor at a trade school. The way that I like to see how much information is being retained is by going to lab, and apply the lesson to real scenarios.
I teach a math class and the majority of my tests involve solving problems similar to those reviewed in class.
As a Spanish and History instructor, I use multiple choice, fill in the blanks type of assessment tests/quizzes. This gets the students to have a wide range of selections to choose from and furthermore, test their vocabulary and content knowledge.

I use a combination of practical,multiple choice, & daily question & answer. I instruct in Restaurant front of the house procedures. We do role playing and discuss what problems arose during service and how we applied our learned skills to solve tose problems.I use only one multple choice test at the end because I can cover a lot of material.
For myself, as a Pastry Arts instructor, the practical exam works best for me. My students can list all the different types of ingredients and how they react to one another in a product but if they cannot make the item correctly, the true skill has not been learned. The industry they are trying to enter into is one that will require more of thehands-on skills.
