I agree. Playing music during cleaning time may be approprate. During prep work -- it depends on the team as well as on the choice of music.
During service on the line absolutely no music! It distracts and the necessary communication may not be heard correctly.

yes, we need to be cautious regarding how much is too much of a good thing. Hopefully instructors can get a feel in their own labs, classrooms, etc for what is appropriate & what is not.

I think this module could offer some good guidelines for music use in a Kitchen Lab setting. Often the temptation is to have the music too loud; and this can be distracting.
I've used music during clean-up time and I agree it motivates and gets the students to complete the process much faster. However, I haven't used music during labs/practice. When I worked in the kitchen, during prep or mise en place, music was a good asset. But when working the line, it was a distraction.
I personally like music in the classroom, but for some it becomes overload especially in a kitchen enviroment. I usually limit music to clean up time. It seems to act as a motivator.
I have found that some students it is a distraction because it takes away their focus. The other students it comes them down. The other is what is the music. I keep it mello.
