Within culinary arts lies the opportunity to engatge the kinesthetic/tactile learners seemingly moreso than in general academic courses. Instead of asking students to produce what was just demonstrated, the road to success begins with derriving good notes as a blueprint to success within the project
I agree. This is especially true when working in a vocational setting. Adult learners usually understand better when they are able to practice or apply the skill rather than just hearing it in lecture or reading it in a book.

keeping an eye on the amount of time we are spending on a topic, etc is important.

I agree, I know it's best for me therefore a little easier to communicate. I understand not everyone is going to be {geared} in this way, but I do think in some way everyone can benefit.
I find that I need to lecture for short periods of time as the students lose interest quickly. If I add visuals it helps with their attention span and gives them a break from the lecture.
