How to score/grade groups?
Usually, I grade group work based on 1. the assignment they were assigned to complete or 2. when doing workshopping I grade on their comments to their fellow group members - how well, complete, in depth they comment. Ocassionally, I will also give completion points - basically, were you on task, talking, contributing etc.
In my classroom, I grade in two ways. I grade based on the content and what has been created - along with giving the students an opportunity to grade themselves. How they feel they (individually) should be graded, along with how they feel their counterparts should be graded.
So how does that work for you exactly? Seems like that would create a lot of work for you and also potential conflict between you and the students and between the students.

What are the pros and cons of a simple pass/fail or go/no go grade for the group on a project?

I think this is a challenge for most instructors. I typically grade both group and individual work. But - in order to do that, I provide the students with a rubic with expectations of the group along with expected outcomes as well as exactly how they will be graded. After we have carefully reviewed the rubic in class, when a student has questions, they can refer back to the rubic for clarification.
I do my best to provide clarity of process, project outcomes and grading system.
