It has been difficult teaching students that cannot read and write well. They often try to cover up the dificiency and are not confident in their studies.

I, also, have students read out loud. I had them start a list of words they don't know and required them to look up the definitions as part of a quiz. I am oing to show them an online dictionary tonight that will provided the spoken word with the definition.
One thing that I always always always do, is have my students read aloud. I get a better understanding of how well they CAN read, and or understand what they are reading. When we come across a difficult word, or one the student doesn't know, I make the whole class repeat the word, once... and again.....and again... and again. That was the student doesn't feel singled out by not knowing the word, and the whole class gets to participate in the proper pronunciation.
It has almost become my trademark. :) "Say it again Ms Sharyn... one more time.... one more time!"
Yes, offering tutoring is helpful.
I agree completely. In the culinary education field a number of students have not been strong in their previous educational experiences. I encourage all students that may need extra help to talk to their instructor to get help and direction. If they are uncomfortable with that talk to one of the tutors or utilize one of the many help centers available to them. First and foremost they need to know that they should never be embarrassed. They are know in school and what better place to receive all the help they need to achieve their dreams and goals.
