my solution to managing the class is to cover the material completely then reinforce the content in the shop.

If at all possible try integrating lecture and lab into smaller time segments. 15 minute lecture, 30 lab, repeat. This can reinforce the learning. Also, are you using any interactive activities during the lecture time?

I find in my class even after I have gone over the material there may be some will learn more in the shop environment and asking questions about what we have lectured on.

Try the mini oral quiz with small groups of students instead of the entire class.

In my class we have 3 days of lecture at the beginning and then it is a lab environment but I do quiz students individually upon completion of tasks and also take a few minutes everyday to do a mini oral quiz with everyone so that I can address points that may have come up during lab or just to refresh and reinforce what we talked about during lecture.

How do you know the students have absorbed the material before you go to the shop? While covering the material is admirable we do need to check for understanding frequently in lecture and lab settings.
