Motivation
Always tell the good students how well they are doing and tell the ones struggling how well they can in act do.
Toni,
Yes, they do and we need to provide both on a continual basis so our students don't wear down during the course and become overwhelmed with life issues.

Motivation and encouragement go together make for a very confident student: a successful student.
Miriam,
Good way to "win them over" in terms of seeing how the course can help them move toward their career goals. If they can see relevancy and application in what is being taught they will be engaged in the learning process.

I always tell my students from the first day to do away with the words I can not and think positive. I let them know that each person will have an area that they may excell in but may discover other areas that that given a little effort they may enjoy.
Lourdes,
This is an important part of their career development. They need to have the basics and then build on them to define and refine their talents in the field. This way they can find a place in the culinary field that fits their personality and expertise.
