You're right, it is human nature to want to be on top and make big bucks off the bat, but unfortunately most of the time that is not the case. It is kind of like you have to crawl before you can walk, eventually you will get there.

Anthony, this is a very important step for students to understand. Students, myself included want to be on top and making "the big money" as soon as they graduate. They need to understand there is a base that needs to be made and then you "build" upon it.

I find that if I can get the students to understand that this is where the people they look up to started at too. I can get them to understand that what I am teaching them is a road map to get there.
Absolutely, the students need a buy in to maintain interest, but like always , we need to walk a fine line. Tailoring too much to interests cannot take away from the teaching of the basics. Students, when learning about cakes for instance, are excited and want to start off with radical designs like they see on TV, but we need to be careful to ensure they can first bale and frost a basic cake: clean and presentable: walk before running.
