I have found, the first day of class I see two types of student. The ones who can’t wait to see "what’s in it for me" and the ones who see no benefit from the course and just want to get it over with.
I usually start the course and if possible each new chapter showing them what’s in it for them now and how it can pay off in the future. I usually come up with some way to make it fun and try to get the "wow, that’s cool" out of the class.

I have had former students talk to current students. As long as permission is obtained from the student, it is fine to quote a student or to share a student's testimonial.

Can you have some former students talk to the students, or post quotes from students.
I always asks my students what they learned in the end. I have them write a sentence of what they would say to a student walking into the class for the first time. I get permmision to quote them and then I put the best quotes on the wall as a motivator.

You may need to include some intermediate assignments to lead up to the advanced work. It is challenging to connect dots going from basics to advanced work.
