Visualizing expectations for your students
What are some practical examples of how to help your students visualize their expectations of mastering the content, skills, and gaining the necessary expertise from the course? I agree that this is a critical piece, since if the students don't think they will succeed, there is no use trying, however I am unsure of what to do. Can anyone provide some examples?

It sounds like you have some great applicable stories that students will be able to benefit from. Students need to and want to hear stories that apply to the content.

I also like to talk about their potential income every opportunity that presents itself, in addition to sharing with my students jobs that recent grads have received. This generates excitement especially if they know the grad.

Right. I think that I do explanation, but things like job postings or professional examples could be of benefit in that regard, not only when giving projects to work on.
I show the students examples of each subject applied in the "Real World". I can share my experience using the course content and how I succeeded.
