I tell the students that learning can be fun. Even when the material is challenging or difficult to comprehend, they should understand that we are using proven techniques and procedures that will provide them with skills and knowledge which can be counted on the rest of their culinary career. Start with good ingredients,don't take shortcuts and the results will ususally be very good.
I teach a culinary arts pastry class. I give the students a lot of examples about the real world. I also try to get them doing hands on lab work as much as possible and as soon as possible each day. They really need to learn by doing and I think that working on challenging or creative projects keeps them interested and excited about the material. I try to include some projects that teach basic techniques but look very impressive - for example making a buche de noel. This is more fun for them than basic pastries, even though they may be practicing the same techniques. That makes them excited. I also try to encourage them and give them good feedback when they try hard. I have a reputation as a tough teacher, so I think the students who work hard and get encouragement from me do get more excited about the course.
Students get excited about the course when they hear of recent graduates making the products that we are making in class. So I give examples of students at a particular resort and list the items and procedures that we do in class.

I like the idea of making the students the researchers so that they become more knowledgeable as well as excited about the course content.

Doing presentations, allows for some research on the student's part and having to discuss it in class has everyone on alert.
Some methods that I use to get students excited about my class are visuale aids. I show the students some of the instruments and equipment that they will be working with. I also let the students observe someone that is doing the job that they will be doing once they complete the course.

I find that stories of past experiences about the subject work for me. This usually promotes discussions and we ride the discuusions to wherever it takes us. Students love to give their 2 cents.. if you only give them the opportunity to do so.

Other than that, I give examples of how communication is in all aspects of life, including their chosen career, and the importance it will play in making or breaking a career.

I try to relate it to real life experiences I have or someone I know has had. I ask them what they want to know or do know about what we might be learning. I make the course outline easy to follow so they know ahead of time what is occurring but I also tell them this is a road map on our trip and a in any trip detours can happen and something might come up to change our route.
I agree that eye contact is very important. It helps to make the students feel more involved in the lesson and allows me to make sure they are engaged.

I present to them career applications for the subject areas they are learning. Providing real world examples of how to apply what they are learning seems to get students excited about the course content.
