I have found by being overly interactive and showing animation in the classroom is the best way to grasp a students attention. This also shows your passion of the material you are delivering to the student.

Usually starting with enthusiasm isn't difficult for me but maintaining it in the students can be a bit rough sometimes. I usually keep trying to get feedback from the students on what they think would make the class better and when I get the complaints about too much work, I point out why I have the certain assignments and that I want them to be competitive in their fields.

Enthusiasm begins with the instructor. If the instructor is not excited, the student is not going to be excited. Excitement is a trickle down effect, beginning with the instructor.
