Email etiquette is absolutely crucial.
It is the newest form of writing for business.
I cannot tell you how many times I have had to tutor students on using subject headings, writing complete sentences, introducing the subject etc.
Students just do not know how to make requests or asks questions in a business format.

You are both right--one of the biggest issues I have to address with my students is email etiquette. I will have students email me without addressing me, signing their name, or reviewing their email. There will be misspelled words, no capitalization, and run-on sentences.
To combat this, I will refer the students to this link: http://www.101emailetiquettetips.com/ and give a brief quiz over the material. I try to remind the students that they should email all of their professors using a business-like approach if for no other reason that it is a good thing to practice.

You are correct about email etiquette. This combined with the generational idea that I can say anything to anyone because that is my right bothers me greatly and needs to be addressed.
