This might be easier to answer if the course work is career based. If that's the case, then simply find the closest environment that supports the careers you are speaking about in class.

If not career based course work, then it is more challenging, and possibly impractical.

Student get to hear from those working in the field that what you have been telling them is true and accurate. It also helps them to see how what they have learned in applied in the work world. I often tell my students different things about the field and they think I am exagerrating but when they hear it from others or when they enter the work force they realize that what they were told is accurate.

Guest speakers are also great because often they explain topics in a different way. Some students may have difficulty understanding a concept and a guest speaker will come in and explain it in a different way and you can see the light bulb go on in the student's head. Guest speakers also help me as an instructor to realize that my students do understand what they have been taught. I on many occassions have been proud when a guest speaker comes in and my students can answer the questions posed by the guest speakers.

Listening to guest speakers gives students insight into their chosen field. It can and should get them excited about how their education is going be applied and how it will benefit them.
Going on field trips puts students' chosen vocation into perspective. It gives them a "real world" view of what that vocation is really all about and the environment in which they will be a part of.
