It is important because not all of your students learn the same way. Not only does it allow for different types of learners, it allows for a variety of ways to keep the lectures/demonstrations fresh and the students focused.
Not all subject matter, student level of knowledge, or what the student wants from the training courese is the same. Sometimes students can have a grasp of parts of the lession matterial, but are having difficulities with other information and need instruction in a different form.
In my classes I have such a mix of ages, and previous experience, and educational background that I must continually change my delivery to reach the entire group.
Varying instructional methods keeps the instructor and students engaged. Monotonous teaching deliveries cause instructor burn-out and student disengagement quickly. I stick to the 15-minute rule: I change activities--and the type of activity (avoid 2 group activities back-to-back, for example)--every 15 minutes.
It helps to keep the students attention if you vary your delivery method throughout the class. I've noticed while changing my methods while teaching the same information, helps students understand when they still we're unsure after the first method.
Students learn in different ways, therefore, the teaching methods should vary in order to meet as many students' needs as possible, and to keep the communication inteesting.

By using many methods throughout an instructional period, an instructor is able to more broadly ensure understanding and comprehension of material across the student population.
Even if your basic presentation is good, and your teaching method is appropriate to the material, doing the same thing every class period (or even for an entire single period) can become stale and non-stimulating. A little variety keeps things interesting and helps keep students engaged.
More important, however, is that, while each student has a preferred learning style, we in fact do learn via all four styles. Engaging different learing styles while covering the same material (i.e., teaching the same thing in several different ways) helps promote understanding and retention.

You usually have several different stlyes of learners and you need to service them all.

I provide a variety of approaches including mini-lectures using Powerpoints, videos, group activities, work-time, and demonstrations. I find this approach keeps my students engaged and wanting to learn more.

It is important when teaching computer skills to have a hands-on approach, and also a textbook so that students may have access to look up techniques when they can't remember how to do things.
It is important to vary instructional delivery because everyone learns differently and on any given day or with different subject matter individual learning styles will vary.
