Most students have learned the safety rules in lectures, quizs, and hands on but not all follow safety rules as well as they should and we have to be on top of that. 

Student progress is essencial, by using rubrics and having them do multible tasks their skills improve and their grade.

I have noticed that most of the students that i teach are kinesthetic learners. We do have books in the class room for all students that show step by step methods but they like watching how to do steps first.

Bloom's Taxonomy has all the right breakdowns, every student learns at different speeds / levels and abilities.
