I am that OCD nut who loves to organize paperwork. File folders and labels can be your best friend.
Just make sure you have a clean desk every morning when you start the day, and you'll know exactly where everything is, that's my rule of thumb.
Also, I always keep track of ingoing and outgoing paper items. In an Admissions setting, there's several items that can be flying in and out of your office through out the day (from inquiries, to applications, to visit sheets, HS visit reports, the list goes on and on).
