The goal of educating students is a number of things. It includes teaching them the proper skills for their chosen career, teaching students soft skills such as professionalism, appearance, interview skills and resume fabrication. Above all that, I think education students must include teaching them confidence, and a passion for their chosen field.
My goal as a career college instructor is to offer all the knowledge I have in my field of study combined by the clinical knowledge of 15 years and combine them to give a student the best education they have had. The idea to me is it took me 15 years to learn what I know. I am teaching them it all. And then my goal is to send them out of my school "the best", but assuring them the best experience possible

With adequate preparation, one goal I hope for in my students is the ability to solve problems, communicate solutions, and resolve issues. These can't be taught per se, but the foundation for an approach to critical thinking certainly can. Like you say, growth can occur through guided experiences.

In the military, goals are set to match the learning scenario. As the person is promoted, the goals they achieved previously; are utilized to achieve new goals.

Yes, as in many professions, the tasks that are taught are based on the principles to improve something (or prevent something). Getting students to be thinkers and problem solvers brings a higher functioning individual to the employer.

I think there are levels. At a minimum, the knowledge and skills must be provided. Next, soft skills such as attendance, punctuality, and professionalism will be helpful. A higher goal would be to impart critical thinking, problem solving, and the pursuit of life-long learning.

In my field of Dental Assisting we not only educate students to go out in the field and work along side dentists we are also teaching them about their own oral health and the knowledge the take home will help the students understand better what they can do to help themselves and their friends and family with understand the "whys" of good oral health.
