I tell the students what they are about to learn
and how it will help them in the industry that they are going into. Then I do a demo to grab their intrest.

I totally agree, adult education students are more looking for instruction to help them get a better employment opportunity , specially in the era of career changes,so the best way to motivate them is to make them see the connection of what you are teaching with their chances of getting a good job with a good pay.
I try to connect the course content to their chosen career with "real world" examples so the students themselves can see the benefits of mastering the material and whenever appropriate I try to inject a little humor; students learn more easily when they are enjoying the class.
I start off the first day with a mind set of the course as need to know information reguardless of the preconcieved image that the student may have. When students feel they have some knowledge of a subject they turn off to certian subject matters. I let them know that the world is ever changing and if they don,t stay with or ahead of the curve it can be difficult to play catch up. I share real life instances so they can realize that there can be more information about any subject as long as they keep there eye and ears open. I throw out questions to some older students so that the younger ones see life from or through anothers perspective and then I ask some younger students different or sometimes the same questions to find out what they have experienced. Some times younger students sit on the side lines and wait before getting involved for fear of making mistakes in front of there peers. So I after several questions I can see who in the class is ready and willing to take on new challeges and who sits back. After some general disscussions have come up about what is the knowledge level in the class. I let every- body know the importance of getting involved from day one so they can learn as much as possible in the time they are in class so they are as prepared to handle real world situations.

First I get them interested by preparing a small demo and getting them involved with a "real life kitchen" feel.
Next, for the students it is all hands on while I supervise and assist them in preparing their dish.
I use my own experiences in the business to "break the ice" about my subject and then have them tell their stories( or nightmares if any)This usually makes them more comfortable and then they are eager to start with the syllabus

It shows whenever an instructor enjoys or disklike the subject matter that he or she teaches. When the istructor is excited about the subject, the student gets excited. We need to keep excitement in our classrooms.

Of course all instructors should enjoy what they are teaching. That being said, I feel that a
"genuine" show of passion for the subject being taught is necessary by the instructor. This portrayal will aid in getting the students respect and interest. There are obviously many more techniques needed to get the students dedication but I feel being "genuine" is vwery important.
I use real world examples to peak their interest.

I have forgotten what Doreen's exact strategy was, but I think the student would benefit by interviewing someone in the field they are interested in. Then to write about their experience doing the interviewing, and presenting to the rest of the class helps them to know if it really is what they want to do.
