In my course, I have a 50/50 lecture/lab senario; when I see my students are lost, I immidiately decrease lecture time and do more labs. Sometimes I go even further by changing i nstruction method to a clinic/all hands on approach to keep student's interest.

There should always be a couple different ways to teach the subject matter to a class. Sometimes a training aide might break, or a tool is not avaliable so you need to have a plan in reserve to still teach the material witout the students feeling the wheels came off and see you as un prepaired
It doesn't seem to matter how old the students are...they still enjoy games. Peer teaching is another method to use when I see a few glazed looks on concepts I see they are not grasping. I usually have them break into groups, placing a strong student with a few weak ones and do an activity that allows the stronger student to work with the others to explain the concept in a different way. I find that the shy student that did not let me know that they didn't get it is more likely to tell a peer about it and get the help they need that way.

That's a superb idea. Another thing that may work (if practical) is to have the instructor walk around while lecturing, bringin a closer proximity between them and the student.

Back-up plans are especially important for the online learning environment for the very reasons you state. When we discuss the use of back-up plans, we are usually addressing the need for them in a traditional face to face environment. Here's a question - is there a purpose for back up assignments in the online learning environment in the same manner as face to face classes?

The main idea of creating back-up plans is their use in case the instructor runs out of time or needs to change topics rapidly. It doesn't sound like you have an issue with that in your class.
Another thing these back-up plans can be used for is as a means of looking at material in a different way. It seems like you have already addressed this as well!

I always like to have a video that references what I am lecturing on as well as access to the library. Keeping lessons in more then one location is also helpful. Your jump drive can only do so much. Having a plan B is always needed. There have been days when my sinus and allegies take away my voice completely, but I am able to still complete the class by printing out slides, showing a video and working case studies and having large group discussions.

The first thing I do is make sure I am prepared and ready for the unexpected. I accomplish this by making sure I clearly and totally understand the subject matter at hand. This affords me the opportunity to develop multiple delivery methods which can be used at any given time. I feel my job as a facilitator requires me to make difficult subject matters easy. Because learners have different experiencies and learning styles, I must be ready for unforseen situations.
