What drives students to become excited about course content, is the passion, excitement, and conviction the instructors demonstrates during the explanation of the content. Show them you love and cherish what you are about to teach them.
I like to relate clinical and other real life scenarios they will encounter. I share my stories that are pertinent to class material, and ask them to share as well. When I ask for their insight on matters, they feel more connected to the material.
i agree with the previous post...show real life examples albeit problems with unique "out of the box" solutions can often create motivation and on topic discussion from your students.
I use real life applications along with demo's to help the students relate the content they are studying to the field they will be entering. Depending upon the subject I also will bring in a guest speaker to speak with the students and answer any questions that they might have.
I teach various subjects in a commercial deep sea diving school. One attention getter I have used is to pass around my my first two weeks (canceled) paycheck I received as a commercial diver. It was for $3400, net pay. When they considered that this was in 1980, and the tax rate was approximately 40% it got their attention. Then I add that an evaluation of their knowledge and work ethic during the first couple months will determine if they keep their job or get sent on high-paying jobs versus lower paying routine jobs.
Seeing that doing well in our classes has a great economic effect on during their future jobs tends to make the students try a bit harder.

I concur! The instructor's energy level is contagious, either good or bad. Students love it when we take a break from the normal lecture way of teaching, and we teach using another method, such as case studies, role playing, scenarios, etc.

Showing students how they can personally and professionaly benefit from the course should get them excited about what is to come. Giving examples of how these soon to learn skills, using personal experiences can also get them excited.
First and foremost I think having a love of the subject you teach can really make a huge difference in student attitudes. If they can feel the instructors enthusiam they can be motivated easier in my opinion. I also think that for most students making the connection between the material and its relevance to their future careers or possibly even daily life is the true key to motivation. For example, I try to bring in "case studies" that we do as a class to show how the information is used in the "real world". It has been very effective for me. The students love the break from the normal lecture type class and they really seem to get into the activities, even those who are struggling in the class.

Interaction with one another, going immediately from the didactic setting into lab so that demonstration can follow lecture, referring to the textbook while performing hands on material. The students relating to one another in a type of "Do you have any idea what she is talking about?" type of situation, having students who have gone on to the externship phase of the course work return to the classroom setting and relay their experiences.
I will always give exciting or real world examples of the things they will learn along with the chapter numbers. I find that students realize every chapter we cover is important and that they should try to attend all classes to make sure they receive all the information that interests them.
