Best method of delivery for a classroom of vastly mixed learning styles?

Every few classes I end up teaching, there enters a few international students or students who have just moved to this country permanently. They are usually the most quit and less likely to provide input on first day discussions. I am sure this may be due to self-criticism on their spoken English abilities or just the unfamiliarity of their surroundings. Any ideas on how to get them comfortable adjusted on the first day and more involved?

Learning Styles

I find that the new generation of students starting school (culinary and pastry) for the most part have little desire to take on their reading assignments. They do enjoy all the hands-on work we do in class. How can I get my class to do the necessary assignments that will in the end, help them understand the big picture? Keep in mind, most of these students are straight out of high school.

Keeping Lectures Interesting

The use of different approaches for lectures helps keep the students interested and better focused. The use of youtube, mini demonstrations and short movies intermixed with lectures helps the subject to be better assimilated by the students.

I think that refining our teaching abilities is very important, that being said we must never lose touch with our industry and the things that will make our students sucessfull.

Varying the Instructional Approach

A varied approach is one that tries different methods in order to get to what is best for the students. Lecture, demonstration, discussion and so forth are all good. But, be flexible.

Subsequent Impressions

Making a good first impression is important. But, it is also important to continue this good start in subsequent classes. Students will benefit from such an approach.

Poor Environments

Even if the learning environment is not ideal, instructors need to be positive and persevere.

Special Problem Learners

Some students have special problems in learning. Instructors need to be sensitive about such situations.

Retention through carefull explaination!

I like to do what usually works well for everyone. Carefully explain each part, why it is required and how it works. I usually have retention rates in the high 80's and up. So, It seems the method works.

Name Tent

One of my favorite things to do to get a class going is Oragmi. I have students take an 8.5 x 11 sheet of paper. I tell them we are goint to do an art project. Everyone looks nervous. Then I have them do two folds (like a business letter). I then tell them they are done with the art project! It's a name tent! I pass out markers and have them decorate the "tent". Students love it.

Student Centered Environment

In an online environment, it is important to establish an student centered online enviroment where student are the major participants in their learning, peers serve as their learning partners, and the instructor serves as the coach, mentor, and facilitator in the learning environment.
