It is important to show students examples of the work they will be doing because it shows them the expectations the instructor has. It also reaches out to the visual learners who may not completely understand the assignment from just lecturing.
Having examples for the students to see let's them see what is expected of them and if they have had examples in the past, they may ask you for them. Providing an example to the student can help lower the anxiety level of the student for the particular assignment.
Showing students examples of assignments they will be doing in class is important to show them what the expectations are for the assignments as well as providing them with a starting point for the assignments. I believe showing the students both positive and negative examples of the assignments better defines the expectations for them.

In my class,I help the student to understand if they can work with the human body, I teach Anatomy and physiology 101 for students that want a career in the medical field and you will be wonder how many students find the first day,that they don't have the stomach to be in the class.
Part of the reason it is helpful to show students examples of the work they will be doing is that we are a visual society/generation and a picture is worth a thousand words. Also, another reason that examples are helpful is that they often times demonstrate the multiple ways in which a project/assignment can be completed. This is especially helpful, and freeing for the students, as otherwise students can get stuck on the idea of doing an assignment/project only one way and can't--or won't--see past that.
As an English composition teacher, I always ask students who produce excellent papers if I can use it in the following terms because it allows students to see firsthand my perspective of a good paper. The nature of paper grading, even in the use of a rubric, is very subjective, so students get nervous about my style of grading. Also, the paper shows allows them to see an essay that isn’t written by a professional. Many of the examples I give from professional writers can be overwhelming and not exactly what we base as a model for a successful freshman composition essay.

It's important to show examples because it gives them a visual blueprint, it builds their excitement, and helps with any fear of content.
