Absolutely! For most people whenever they see what is expected they have a better idea as to how to move forward.

I try to give them an example of the project's structure but not an actual project. I teach art-related classes and it seems to limit the students from doing a creative work.
To show them what will be expected of them and the quality that is expected, too. This also shows them what is expected of them when they go out and get jobs in their specific fields.

By showing students examples it helps to relieve a lot anxiety. Students are always concerned that they will end-up with a teacher who expects more than they can produce. Examples clearly demonstrate what is expected from the student to successfully complete the course.
When you assign a project to your students you should always show them examples so that have a clear understanding of what you are exactly looking for. I find it releases stress for most of them.
