Using formative and summative assessment are very important, we can't rely upon just student feedback. Looking at the entirety of the course, not just one assignment for organization.
Use multiple methods of evaultions!
I realize the importance of taking a systems view in conducting an evaluation.
It is critical to incorporate the end user evaluation to ensure you are including mulitple methods and resources for review.
Student evaluation should also be used to compare how various learning objectives were taught to find out what students found to be the best way.

It is important to not rely on one method of evaluation. Having multiple methods deepens a student's level of understanding.
I can remember being in college and having to do these evaluations as a student.I never thought about it on this side of it before, but it is very important for a teacher to be open to feedback and ways to improve their course. I will be going into my sixth year of teaching, and I cant remember a year where I didnt spend a portion of my summer revising assignments for particular units.

It will take multiple tools, from your multiple stakeholders, to provide the feedback that you will need to make continuous changes that improve your online course and close the loop!
Closing the loop can be considered the most important instructional strategy because it allows for continued evaluation of and implemention of improvements of delivered instruction. Multiple methods for learning objective assessment and evaluation should be employed.

Gather input from multiple sources, students, self evaluation and if possible peer review to revise course materials and delivery to improve outcomes.
