It is helpful to show them examples so they can see that what looks difficult at the beginning is acheivable during the course. It would provide motivation to do well during the course.
My students do not do a "lab" but I will put on a surgical gown and gloves via sterile technique for them to SEE what sterile technique is and help them to understand the difference between what is sterile and what is not. This helps them to understand the various roles of the team members in the OR, which they need to understand for my class and prepare them for the next class they will take after mine.
I also have them write a short paper on various aspects of professionalism and how it relates to them as a student and as an employed Certified Surgical Technologist. I have them read their papers aloud in class and we can discuss any similarities or differences in view.

Showing students examples of the work they will be doing in an upcoming course gives them a visual (helping those with a visual learning style)of the expectations of the work they will be doing. If assignments are explained well in the syllabus, and they have a visual of the work their anxiety level will be reduced. I've heard students often say they wish they could keep the same instructor all the way through school. It produces anxiety to not know how to adapt to the teaching style and expectations of a new instructor.
I find student examples to be exceptionally helpful when presenting a project to a class. I've also learned the importance of trying the project myself--to make sure my directions are as clear as the visual picture I've created in my mind.
Students love to see what type of work receives good grades, so they know how to begin. Because we teach adults, they can take these examples--and build their own unique project versus children who tend to copy what is liked by the teacher.

I always ask my previous students it if is okay to use their work and they always appreciate it and like the fact that we recognized it was exceptional.
Well, this actually acts as an important visual before even engaging into the work. This allows students to feel prepared and know exactly what to expect. The bottom line is, we must allow them to feel as comfortable as possible.
Showing examples is a useful motivational tool. It allows students to view work, and envision how that particular work created an impact in their chosen career field/industry.

It is important for your students to see examples of the work expected in the upcoming course so that they can know what is needed of them. It is important for them to know what is expected of them through the entire course. They need to know also that this will help them in the long run be able to produce the work that is expected. This will also let them know how the grading will be done and what the rules and policies are for assignments. The student should have minimal questions in the end if done correctly.
As a student myself, I feel it is helpful because it gives students something to start from. Seeing sn example of something helps students feel more comfortable with the project or assignment.
To reduce anxiety they might have that a project or assignment might be too difficult for them to complete.
As an instructor, I've found that when you distribute and/or review a rubric or other assessment form for an assignment or project that sometimes students need an base example from another student to model after. Older non-traditional students who are not familiar with rubrics can have difficulty reading them and then visualizing the format of the finished product. Reviewing other students' example gives these apprehensive students the awareness of the base skills required to complete the assignment.
It will reduce anxiety and give them a visual of what is expected.

I feel it sets the tone for requirements of the
subject matter. Allows students who may have questions/concerns to comeforth right away rather
than struggle at first, whereby possibly causing
discouragement. Simply clears away stumbling blocks. They usually have a much better understanding on how to go about the task at hand.
I always try to make it very clear at any time
the door is always open should questions come up.
Rubrics and examples are both helpful so students will have very clear expectations and guidelines. Using these tools will alleviate any confusion or concern about their grade.
