The course that I teach lays some of the foundation for projects the students will be accomplishing in later courses. This I believe gives them a motivation to become proficient with material in my class.
It helps my students connect the dots. Even the lab time doesn't give a real world view of surgery.
I am really liking this idea of showing students positive and negative examples of work. Then having them utilize the rubric to evaluate the examples and discuss it as a class.
Then there are no surprises when it comes to grading and it re-enforces the expectations of the assignment. I even believe in some ways this mimics more of a real-world scenario of how the students will be trained and evaluated on the job.
I am definitely going to use this strategy for explaining the next class project.

In many cases I like to show students examples of work they will be doing. For example, we are now having our class put together a resume for after graduation. Many of our students do not have resumes prepared. A quality sample will be a template for them to prepare a good final product. Unfortunately, having a sample to go by essentially decreases the level of difficulty for the student. I would have to add that samples are only needed on the lower level college course. Students should be expected to do the research necessary to produce a good product without a sample at a higher level of college course work.

First, they can see first-hand that what will be expected of them is IN FACT, doable-- by former students who are just like them. So it can be a good motivator.
Also, showing examples of student work (at the beginning of the semester and throughout the semester) is a great way to model for students what your expectations are. I use several examples of former students' essays (without their names included, of course) to provide examples of excellent writing…and supbar wiring. We look to those as guidelines of what TO do, and what NOT to do in our writing.
For the course project (it takes over the whole quarter to complete), I always show the students an example of how a properly APA formatted paper is done. I also post a template of an APA formatted paper so that the students can reuse. Even with these posted, I still get students who are still not sure how to format their papers properly.

It will be motivated students, and clear on the expectation of the class. Also, it is make them to feel confident on their idea. However, since I am teaching fashion design, sometimes it might limit the creativeness.
I like to show well-written examples to show them the standard they will be held to in the course. Examples of work can also serve as a template or outline for their own work. It will also hopefully get students excited for upcoming projects and push them to do their best.
