I use a combination of both, but I normally use excellent work from previous students with name removal. I have had some students to tell me they want their name disclosed because they are proud of their work and very proud of their work being chosen by the instructor as a show piece.

It is important to give example so students know what your expectations are. It is also important because it can relieve some of the anxiety of "is this right". How do others provide examples? Do you use pieces you have created, or do you remove the name from excellent work from previous students?

Most of our learning is done in the kitchen, a hands-on approach. Many times we will lecture and show pictures of what the students will be making; however, they tend to get nervous about their ability to recreate the item. Showing the students the proper steps and procedure lessens their anxiety. Also, breaking the project into smaller, more managable pieces shows the student how attainable the goal is and allows them to be successful.

Sharing examples really do minimize the number of questions students have. Great clarity is added from examples being shared.

I find that many of my students haven't been asked to complete written assignments with a certain format. To show an example often puts them at ease, "oh I can do that".
It makes the requirements clearer and reduces anxiety.
By doing this, it helps to eliminate alot of questions of what they will be doing and gives them an idea of what is going to be expected in that particular course. The biggest thing to point out to students is that things change what worked in the term before may not work for this class.

These ex-samples show the student what will be exspected of them in class and on the job.
What you are looking for in an assignment may be clear to you but students may not be able to visualize the completed task. Showing them examples of previous work may get their creative juices flowing to come up with something even better.
That way the students knows what is to be exspected. I believe it to be helpful to the instructor because he or she will discover the potential of each student and how they prepare.
Students need to understand what thier efforts go toward and have something to see as a superior example to what they will be producing. Something to look forward to in effect.
